How pretty is this bowl? And it's packed with plenty of vitamin C, protein and fiber.

1/4 cup apricot juice (we like Looza)

Handful dried apricots, diced

1/3 cup plus 2 tbsp. Plum + Rose Jam

1 cup Greek yogurt

1/2 medium pink grapefruit, segmented (white pith removed)

4 oz. canned mandarin oranges, strained

1/4 cup bran flakes cereal

1/8 cup pistachios, toasted

1. Put the apricots and apricot juice in a small bowl and cover with plastic wrap. Microwave until the apricots are tender and the juice is syrupy, 1 to 2 minutes.

2. Remove compote and let cool. Stir in 2 tablespoons of jam.

3. Put the yogurt into a small mixing bowl and stir in 1/3 cup jam. Place mixture into a cereal bowl. Spoon the apricot-plum compote into the center.

4. Arrange the grapefruit, mandarin oranges, cereal and pistachios in neat piles around the compote.
