summer salad with kiwi vinaigrette

Who doesn't love a refreshing summer salad with a light, fruit-forward vinaigrette?

Serves 2

For the dressing

1/2 cup. Spicy Vanilla Kiwi Jam

1 tbsp. dijon mustard

1/2 lemon, juiced

1/3 cup extra virgin olive oil

Kosher salt

Freshly ground black pepper

For the salad

Blend of greens (arugula, radicchio, watercress, spinach, etc.), enough for 2

1 handful fresh mint leaves

1 kiwi, sliced

3 large breakfast radishes, thinly sliced

1 large golden beet, thinly sliced

1. Assemble salad, piled high on a plate and set aside.

2. Blend jam, mustard, lemon juice, salt and pepper together in a blender.

3. With blender on, slowly drizzle in olive oil. Taste and re-season if necessary.

4. Serve along side summer salad.
