Gluten-Free apple butter pear & walnut cake

This cake substitutes butter for apple butter, and we can’t think of anything better.

150 g. Chinese 5 Spiced Apple Butter (approx. 5.29 oz.)

3 pears, washed

160 g. sugar (approx. 5.64 oz.)

125 g. ground walnuts (approx. 4.40 oz.)

120 g. rice flour (approx. 4.23 oz.)

1 1/2 tsp. baking powder

3 eggs

2 tsp. cardamom

1 tsp. vanilla bean paste

1 pinch of salt

Powdered sugar, to garnish

1. Preheat oven to 350º.

2. Mix oats, flour, sugar, baking powder, butter and salt together. Press 2/3 of the crumble mixture into the bottom of a 9x13” pan lined with parchment.

3. Bake crust for 10 minutes.

4. Add jam to crust and spread evenly. Top with remaining oat mixture and bake for 25-30 minutes.

5. Remove bars from oven. Eat immediately served with vanilla ice cream (like a fruit crisp!) or chill for a few hours in order to let the bars set up.

*Note: If using a jam with a thinner consistency, cook with a couple tablespoons of cornstarch over medium heat for 10 minutes to thicken.
